Cilantro Chili Lime Grilled Calamari

Kroger had wild caught calamari on sale and I couldn't resist. Since we were firing up the grill tonight anyhow I decided to marinade then grill them.

what you need:
  • 1 pound calamari
  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin powder
  • 1 teaspoon Celtic sea salt
  • 1 to 2 tablespoons lime juice
  • 3 to 4 cloves of garlic
  • 1/2 of a small to medium onion
  • 1/2 bunch of cilantro
  • 1/8 cup bacon grease
  • 1/4 cup butter
what you do:
Melt the bacon grease and butter in a sauce pan on low heat and add lemon juice. Set aside and let it cool off a bit. 


Cut onion into large chunks, remove bottom part of stems from cilantro and place into food processor with onion, garlic, and spices. When the butter and bacon grease has cooled off, add to the food processor and process until well blended and creamy.


Wash and dry calamari, place in glass bowl or dish and add marinade. Mix well so all the calamari is coated with the marinade. Cover and place in fridge for 5 to 6 hours or longer.


Once calamari is done marinating take out fridge and put the calamari on skewers. Grill on both sides for roughly 5 minutes or until crispy on the outside.
